This is the first time we've had the opportunity to purchase and present our customers with a very special micro-lot from this family farm. This coffee has been uniquely prepared using an anaerobic processing method. The seeds (soon-to-be coffee beans) are removed from the cherries (outer skin) and placed in a sealed tank at low temperatures along with the coffee fruit’s mucilage/pectin. While all coffee undergoes some level of fermentation after being picked, in this sealed environment, oxygen levels decrease, and CO2 levels rise, creating pressure inside the tank. This process acts almost like a re-infusion, with the pressure forcing the juices from the cherries into the coffee, resulting in a cup with fruity, wine-like qualities.
Finca Los Papales is located just outside the town of Jinotega in the north-central region of Nicaragua. The farm has been in the Angelina Lopez family for over a century, and to this day, grandparents, children, and grandchildren continue to manage it together. The coffee is both wet and dry milled on the premises to ensure better quality control.
The farm is Rainforest Alliance Certified, a certification that emphasizes biodiversity conservation, community development, workers' rights, and productive agricultural practices, ensuring sustainable farm management. Part of the farm’s land is also dedicated to forest growth, demonstrating their commitment to environmental preservation.
In line with their commitment to the community, Finca Los Papales has partnered with the Department of Education to provide a free, on-site school for the children of workers and local community members. Additionally, in collaboration with the Department of Health, the farm offers a free medical clinic, giving workers and nearby residents access to healthcare and vaccines.
